No, and that wobble is the exact moment to stop. Free play means the bit is contacting the socket on a small part of each flank instead of along the full face, so all the torque you apply is concentrated where the metal is thinnest. A head is already rounded. What is the best chance of getting it out with this set?

If any flank is left, take the largest bit of the correct family that will still enter, press hard along the fastener axis to keep it at the very bottom of the recess, and turn slowly and continuously rather than in short bursts. Most extraction failures are really seating failures. If the socket has no bite left at all, stop before you deepen the damage, because everything beyond this point risks the component the fastener is holding rather than the fastener itself.

Why does the same fastener come out fine one time and cam out the next?

Look at what changed between the two attempts. A recess that has picked up dried chemical or grit will not let the bit seat as deep as it did last time, a bit that has done a season of work has less corner left than it had when new, and a fastener that has been treated with a locking compound needs more torque than the same fastener did before. Any one of the three turns a routine removal into a cam out with no warning.
